“My wife has to be the worst cook. I don’t believe meatloaf should glow in the dark.”

Winter is back, and my heat is blasting to keep the cold at bay. I am wearing my winter around the house clothes: flannel pants, a sweatshirt and cozy slippers. Much to my chagrin, I have to leave the comforts of home to do errands because I didn’t do them yesterday. I just didn’t have the ambition; instead, I watched the last season of Star Trek Voyager. It is sort of sad to know there no more episodes for me to watch. I’ll just have to find another Netflix diversion to keep me away from TV news.

For get-togethers, my mother used to make a couple of dips. We’d have onion dip, the king of dips, and shrimp dip. The onion dip hasn’t changed in millennia: sour cream and dry onion soup mix, Lipton soup mix. For the shrimp dip, my mother would buy the small shrimp already cooked and floating in cocktail sauce. It came in small fluted glasses. Her cupboard had several of those small glasses, evidence of the popularity of that dip. She’d put the shrimp and sauce and some cream cheese in her blender, no food processor back then, and whip. That was it. Party on!

We were never a green salad family. For cook-outs, never called barbecues, my mother always made potato salad, and if we begged enough, Italian pepper and egg salad, my favorite. It was my aunt’s recipe: peppers, onions and eggs and a bit of tomato sauce. My aunt had married an Italian, and she learned the recipe from her mother-in-law. I am so glad she did. I still love pepper and egg salad.

My mother made the best meatloaf. My favorite was when she frosted the meatloaf with mashed potatoes and baked it a bit in the oven so the potatoes sort of looked like meringue. My meatloaves are always different tasting. They depend on what I have in the fridge. I’ve used salsa a few times, and it added a great flavor. What’s great about meatloaf is the leftover makes a fantastic sandwich.

The sky is grim, but I have to go out anyway. I can’t remain a sloth. Gracie will expect to eat tomorrow.

    Today the skies are clear and the high will be close to 60 F degrees. So far we are having a warm dry winter. I can’t wait for a big February surprise.

    My mother made the Lipton onion soup mix dip back in the 1950s. I never heard of the shrimp dip, but it sounds good. I’m not a big fan of egg salad because I got sick to my stomach on a bus trip from El Paso to Dallas Texas in the early 70s The bus made a rest stop in Sweetwster and my cousin and I bought egg salad sandwiches to eat for supper. I have no idea what was spoiled in that egg salad but I became sick as a dog on that bus. I haven’t eaten egg salad since. Funny, though I like deviled eggs.

    My father was a big green salad lover. He read some article in the 1950s that people in the South eat a green salad every day to cure an outbreak of Pelagra in the early part of the last century. I didn’t believe him but I like green salads especially with real Italian salad dressing, olive oil and balsamic vinegar.

    I can take meatloaf or leave it. I would rather have a nice medium rare hamburger.

      Bob,
      It started out around 40˚ but got much colder as the afternoon wore on. It is going to keep getting colder the next few days.

      I’m exactly the same way. I’d eat egg salad if it was the only thing around, but it would be hard doing to finish it, and I love deviled egg. I think it is the consistency of egg salad I don’t like.

      I like salads now and often make them for a summer barbecue side. I put in all sorts of stuff into the salad like dried cranberries. I also like olive oil and balsamic vinegar.

      I’m a burger fan. When I go out to dinner, I often order a burger as I don’t make them for myself too often.

    It looks like a good idea to still avoid the news. It’s so unbelievable and sad to see the direction your great country has already taken in just one week. So what’s the longest running TV fiction series?
    Just back home from a party, we sang and played music and ate potato salad and sausages. Potato salad with eggs, apples, radishes, carrots, peas, grapes and more. I don’t understand why people buy and eat green salad by choice.

      I mute the TV whenever he speaks. I am horrified by him and everything he has done in just over a week. The man craves being liked needing it to stroke his ego. There are demonstrations all over again. This time they are responses to his new immigration policy banning Muslims. Those demonstrations will drive him crazy. He already has to deal with the lowest approval rate of any incoming president and those 3 million more votes that Hillary got. Now we are witch hunting voting rolls.

      I like the sound of that potato salad. It has delicious ingredients.

        I can’t watch him either because he’s an ignorant narcissist, and Pence is pulling his strings and vetting his cabinet choices. Pence is more dangerous than Trump. Maybe Trump will order the removal of the Emma Lazarus poem from the base of the Statue of Liberty. 😦 Sadly he was elected by the clueless Duck Dynasty crowd and the rest of us are stuck with him. I’m concerned with the survival of our democracy.

        Like you, I am scared for our democracy.

        I wonder how many Trump supporters are having doubts given everything that has happened and the demonstrations against Trump and his executive orders.

        Unfortunately, he is supported by the clueless Duck Dynasty crowd. Trump’s campaign against political correctness is just code for, being able to openly discriminate against woman, blacks, immigrants, Jews and of course Muslims. Very sad.

        I am so angry with the republicans who are silent. Paul Ryan is the worst. He follows behind Trump and says nothing. Why can’t someone have the strength enough to tell him he is lying and people won’t take it anymore?

    Meatloaf was a rare thing in my home when I grew up, instead we had cabbage pudding which to be honest more or less was meatloaf stuffed with roughly chopped cabbage. Big bits of cabbage stuck out here and there and when my mother put it into the oven she usually did her best to make charcoal of it all.

    It is always nice with a crust on meatloaf / cabbage pudding but it shouldn’t sound as if one ate dry pasta 🙂 Lucky days we usually found something in the middle that wasn’t totally burnt 🙂 Still, this was much better than her attempt to make macaroni casserole 🙂

      We ate meatloaf sort of often as it was inexpensive to make with the hamburger. My mother had all sorts of ways to make it.

      Macaroni and cheese was a favorite of mine as well. That had to be carefully cooked as it could be dry.

      My mother was a good cook so I was lucky that way.
